Vindhya Tiwary - I have a recipe for Watermelon and dry fruits salad. All you need to do is to cut watermelon, basil leaves and all types of dry fruits, especially walnuts, blueberries, parmesan cheese grated and lemon and just mix it nicely and serve. They are healthy and very delicious. The recipe is known as Watermelon Basil Leaves Salad.

Harsh Rajput - I am a Gujrati and love to cook Chorafali, as it’s a popular Gujrati festival snack, perfect for munching. It takes around 40-50 minutes to prepare it. You need to mix besan and urad flour along with red chilli powder, salt and a pinch of baking soda and make it into dough. Then you need to make small balls from the dough, cover it with rice flour and make thin rotis from it which is then cut into short strips and deep fried. It is then served with mint chutney.

Preetika Rao - I have been very fond of this one homemade sweet that my mother prepares every year since my childhood. It tastes exactly like Kaju Katli (cashew based sweet bar) but does not have cashews in it. It’s made of gram flour, milk, sugar and ghee with a blend of cardamom and nutmeg powder. My Diwali feels incomplete without this sweet!

Giaa Manek - I would share the recipe for Besan Laddoo. Roast gram flour (besan) with ghee in a kadhai, flavour it with sugar and cardamom and shape it into tight round balls. It has to be decorated with almonds and pistachios; it takes about half an hour to make it.

Roopal Tyagi - My aunt always makes Shahi Tukda and I love it a lot. Here goes the recipe for it - The ingredients that you will need is - 2 Tbsp refined oil, 2 bread slices, 100 ml milk, 2 Tbsp sugar free, Saffron (a pinch), 25 gms raisins and 25 gms cashew nuts. You have to fry bread slices in a pan with little bit of oil and keep it on a plate. Then add milk, sugar free and saffron in a pan and mix them well together. Add raisins and cashew nuts into it and mix them well. In the plate, place the toasted bread and pour the mix over it and serve hot.

Alokk Narula - My favorite sweet is Karah Prasad that my wife Anshu Malik Narula and I prepare for Diwali. The ingredients are - 1 cup whole wheat flour, 1 cup clarified butter (Ghee), 1 cup sugar, 2 cardamoms (crushed) and 3 cups water. Here goes the method to prepare it - Take a pan, mix water and sugar and bring to a boil. In another pan, heat ghee. Once melted, add whole wheat flour and roast it till it turns reddish brown in color and a sweet aroma is released. Stir continuously otherwise the atta may burn. This may take around 5 minutes. Add crushed cardamoms and mix it well. Now add the sugar syrup to the mixture. Keep stirring continuously while adding the syrup so that no lumps are formed. Do not stop stirring the prasad till it thickens into a firm pudding and the mixture leaves the side of the pan. Serve this Punjabi karah prasad hot with puris. You may garnish it with chopped almonds and cashew nuts.
